BBQ Chicken

Today we're talking about BBQ chicken! And since in about two hours I will be guest chef on Mark-John Clifford's World Diabetic Kidz Day website I've decided that this particular chicken needs to be super healthy and diabetic-friendly. So how do we manage that? Simple, we go back to a group known for simpler, healthier lifestyles... the Shakers.

This recipe is going to rely on a large dose of apple cider in the marinade to help develop flavor. Feel free to substitute any specialty cider that you prefer (or your doctor recommends!) if you so choose. With that said let's hit that recipe, shall we?

 

Shaker BBQ Chicken

  • 1/2 cup cider vinegar
  • 1/4 cup extra-virgin olive oil
  • 3/4 teaspoon kosher salt
  • 1/4 cup chopped shallot, (about 2 medium)
  • 2 cloves garlic, chopped
  • 2 pounds boneless, skinless chicken thighs, trimmed of fat

 

Put all of the above in a large zip-loc style bag and shake (no pun intended!) to mix. Place in the back of the fridge for at least 30 minutes and up to 3 hours. After it has marinated light your BBQ as normal. Cook each thigh for 6-8 minutes per side or until an instant read thermometer reads 168deg.

 

For extra flavor from the BBQ you can add wood chips for smoke flavor. Apple is always a good choice for chicken dishes like this one.
